Melinda's Italian Style Frittata
1 lb. fava bean pods = approx. 3/4 cup
I don't use any cheese in this, but you could add 1 cup grated
melting cheese to the egg mixture and dust top with grated hard
cheese such as parmesan, romano or dry jack.
2 cups prepared fava beans (see below)
5 large eggs
2-3 tbl water
1/2 lb. hot italian sausage, removed from casing and crumbled
1 cup quartered artichoke hearts
3/4 cup fresh parsley, divided
1 tsp grated lemon zest
Kosher salt
Black Pepper
Olive oil
- Preheat oven to 375º
- In an ovenproof skillet, brown sausage until thoroughly
cooked through
- Add fava beans and 1/2 tsp salt - cook about 4-5 minutes
- Add artichoke hearts, remove from heat and allow to cool
to room temperature
- Beat eggs, water, 1/2 cup parsley and lemon zest
- Taste sausage mixture for seasoning - add additional salt
and pepper if needed
- Add cooled sausage mixture to egg mixture and mix
- Pour into an oiled baking dish
- Bake for approximately 35-45 minutes until lightly browned
around the edges, and center jiggles slightly
- Remove from oven and allow to stand about 10-15 minutes
- Sprinkle remaining parsley over top and serve warm or at
room temperature
Serves 4-6
To prepare Fava beans Split open the pods and remove all the beans.
Bring a large pot of water to a boil. Add salt and drop in the beans. Boil
for about 3 minutes, then remove to a bowl of cold water with ice.
When beans have cooled enough to handle, using a paring knife or your
thumbnail, split the outer skin at one end and press from the other end
to pop out the fava bean.
