Melinda's Favorite Frittata

I don't use any cheese in this, but you could add 1 cup grated melting cheese to the egg mixture and dust top with grated hard cheese such as parmesan, romano or dry jack. 1 lb. fava bean pods = approx. 3/4 cup.

What you need

  1. 2 cups prepared fava beans (see below)
  2. 5 large eggs
  3. 2-3 tbl water
  4. 1 cup quartered artichoke hearts
  5. 1/2 lb. hot italian sausage, removed from casing and crumbled (optional - sub chili flakes for vegetarian/vegan)
  6. 3/4 cup fresh parsley, divided
  7. 1 tsp grated lemon zest
  8. Kosher salt
  9. Black Pepper
  10. Olive oil

How to make it

  1. Preheat oven to 375º
  2. In an ovenproof skillet, brown sausage until thoroughly cooked through, or heat oil and add chili flakes
  3. Add fava beans and 1/2 tsp salt - cook about 4-5 minutes
  4. Add artichoke hearts, remove from heat and allow to cool to room temperature
  5. Beat eggs, water, 1/2 cup parsley and lemon zest
  6. Taste vegetable mixture for seasoning - add additional salt and pepper if needed
  7. Add to eggs
  8. Pour into an oiled baking dish
  9. Bake for approximately 35-45 minutes until lightly browned around the edges, and center jiggles slightly
  10. Remove from oven and allow to stand about 10-15 minutes
  11. Sprinkle remaining parsley over top and serve warm or at room temperature
