Pork Tenderloin with Apples & Onions





1 pork tenderloin, approx. 1.25 - 1.5 lb.
1 large sweet onion, peeled, cut in half and sliced
2-3 apples, peeled and thinly sliced
1 tsp ground allspice
1 tsp ground sweet paprika
Kosher salt
Fresh ground pepper

  • Preheat oven to 375º
  • Remove tenderloin from packaging and pat dry with paper towels
  • Rub with olive oil
  • Sprinkle all sides with salt, black pepper, allspice and paprika
  • Heat fat in an oven-proof skillet over medium-high heat
  • Reduce heat to medium if needed and sear tenderloin on all sides until browned
  • Remove tenderloin to a plate and add onions and apples to fat (add additional fat if needed)
  • Sauté briefly until onions have softened
  • Place pan in oven for 30-35 minutes, rotating the pan once
  • Remove from oven, let pork stand 5-10 minutes before slicing into 1 inch slices

    Serve pork on a bed of the onions and apples
