Pork Tenderloin with Apples & Onions

What you need

  1. 1 pork tenderloin, approx. 1.25 - 1.5 lb.
  2. 1 large sweet onion, peeled, cut in half and sliced
  3. 2-3 apples, peeled and thinly sliced
  4. 1 tsp ground allspice
  5. 1 tsp ground sweet paprika
  6. Kosher salt
  7. Fresh ground pepper
  8. Fat

How to make it

  1. Preheat oven to 375º
  2. Remove tenderloin from packaging and pat dry with paper towels
  3. Rub with olive oil
  4. Sprinkle all sides with salt, black pepper, allspice and paprika
  5. Heat fat in an oven-proof skillet over medium-high heat
  6. Reduce heat to medium if needed and sear tenderloin on all sides until browned
  7. Remove tenderloin to a plate and add onions and apples to fat (add additional fat if needed)
  8. Sauté briefly until onions have softened
  9. Place pan in oven for 30-35 minutes, rotating the pan once
  10. Remove from oven, let pork stand 5-10 minutes before slicing into 1 inch slices


  11. Serve pork on a bed of the onions and apples
