Pork Tenderloin with Apples & Onions
What you need
- 1 pork tenderloin, approx. 1.25 - 1.5 lb.
- 1 large sweet onion, peeled, cut in half and sliced
- 2-3 apples, peeled and thinly sliced
- 1 tsp ground allspice
- 1 tsp ground sweet paprika
- Kosher salt
- Fresh ground pepper
- Fat
How to make it
- Preheat oven to 375º
- Remove tenderloin from packaging and pat dry with paper towels
- Rub with olive oil
- Sprinkle all sides with salt, black pepper, allspice and paprika
- Heat fat in an oven-proof skillet over medium-high heat
- Reduce heat to medium if needed and sear tenderloin on all sides until browned
- Remove tenderloin to a plate and add onions and apples to fat (add additional fat if needed)
- Sauté briefly until onions have softened
- Place pan in oven for 30-35 minutes, rotating the pan once
- Remove from oven, let pork stand 5-10 minutes before slicing into 1 inch slices
Serve pork on a bed of the onions and apples
