Contributed by: Melinda

This works with any pork loin or sirloin tri-tip pork roast.

One 2-3 lb pork sirloin roast
2 Tbl Olive oil
2 Tbl honey
Juice from 1/2 lemon
Crushed garlic to taste
1/4 cup fresh woody herb; rosemary, thyme, sage
Salt & Pepper
  • Preheat oven to 400º
  • Combine oil, honey, lemon, garlic & herb
  • Taste and adjust adding salt & pepper
  • Dry pork and place in the bottom of a small roasting pan
  • Brush about 1/2 the lemon/honey mixture over the pork and back for 40 minutes
  • Brush remaining lemon/honey mixture over pork and return to oven for another 20-30 minutes or until meat thermometer reads about 155º
  • Remove from oven, cover with foil and let stand about 15 minutes
  • Serve with pan juices on the side
