Pork Tenderloin Medallions

  • Gently pound each pork slice to about 1/2 inch thickness between plastic wrap
  • Mix garlic, mustard and worcestershire sauce
  • Rub each pork piece well to coat with mustard
  • Heat oil in large skillet
  • Salt & pepper top of pork then add seasoned side down in skillet
  • Immediately season with salt & pepper on other side
  • Sauté until browned on first side, flip and brown reverse side
  • Test for doneness either with the finger test or by cutting one in half - cook to medium.
