Pork Tenderloin Medallions

What you need

  1. 1 pork tenderloin, approx. 1.5 - 1.75 lb., cut into 1 inch thick slices
  2. 1 clove garlic, grated
  3. 3 tbl dijon mustard
  4. 1 tsp worcestershie sauce
  5. Kosher salt & fresh ground black pepper
  6. Olive oil

How to make it

  1. Gently pound each pork slice to about 1/2 inch thickness between plastic wrap
  2. Mix garlic, mustard and worcestershire sauce
  3. Rub each pork piece well to coat with mustard
  4. Heat oil in large skillet
  5. Salt & pepper top of pork then add seasoned side down in skillet
  6. Immediately season with salt & pepper on other side
  7. Sauté until browned on first side, flip and brown reverse side
  8. Test for doneness either with the finger test or by cutting one in half - cook to medium.
