Pork Tenderloin Medallions
What you need
- 1 pork tenderloin, approx. 1.5 - 1.75 lb., cut into 1 inch thick slices
- 1 clove garlic, grated
- 3 tbl dijon mustard
- 1 tsp worcestershie sauce
- Kosher salt & fresh ground black pepper
- Olive oil
How to make it
- Gently pound each pork slice to about 1/2 inch thickness between plastic wrap
- Mix garlic, mustard and worcestershire sauce
- Rub each pork piece well to coat with mustard
- Heat oil in large skillet
- Salt & pepper top of pork then add seasoned side down in skillet
- Immediately season with salt & pepper on other side
- Sauté until browned on first side, flip and brown reverse side
- Test for doneness either with the finger test or by cutting one in half - cook to medium.
