Super Sausage, Peppers & Onions
1 lb sweet italian pork sausages
1 each red, yellow and orange bell peppers
1 large sweet onion
2 cloves garlic, minced
1 tsp dried basil or italian seasoning
1 tbl minced fresh parsley
1/4-1/2 cup dry white wine
Olive oil
1 tsp kosher salt
fresh ground black pepper
- Cut peppers in half, remove seeds and stems and cut across into 1/4 inch slices
- Cut onion in half, peel and slice thinly
- Heat olive oil a large skillet over medium-high heat
- Pierce the sausages several times with a knife tip
- Sear the sausages until lightly browned
- Remove sausages, add onions and 1/2 tsp salt
- When onions have softened slightly, add pepper strips, 1/2 tsp salt, black pepper and garlic
- Cook until peppers have started to brown and are softened
- Return sausages to the pan and add white wine and basil
- Cover and cook over gentle heat until sausages have cooked through
- Turn off heat and add parsley
