Super Sausage, Peppers & Onions

What you need

  1. 1 lb sweet italian pork sausages
  2. 1 each red, yellow and orange bell peppers
  3. 1 large sweet onion
  4. 2 cloves garlic, minced
  5. 1 tsp dried basil or italian seasoning
  6. 1 tbl minced fresh parsley
  7. 1/4-1/2 cup dry white wine
  8. Olive oil
  9. 1 tsp kosher salt
  10. fresh ground black pepper

How to make it

  1. Cut peppers in half, remove seeds and stems and cut across into 1/4 inch slices
  2. Cut onion in half, peel and slice thinly
  3. Heat olive oil a large skillet over medium-high heat
  4. Pierce the sausages several times with a knife tip
  5. Sear the sausages until lightly browned
  6. Remove sausages, add onions and 1/2 tsp salt
  7. When onions have softened slightly, add pepper strips, 1/2 tsp salt, black pepper and garlic
  8. Cook until peppers have started to brown and are softened
  9. Return sausages to the pan and add white wine and basil
  10. Cover and cook over gentle heat until sausages have cooked through
  11. Turn off heat and add parsley
