Quick Zucchini Skillet
Total time for this recipe is 30 minutes or
less.
Use ground beef, ground turkey, ground lamb or ground chicken.
One 2 inch diameter freshly picked zucchini (about 3 cups cubed)
1 lb. ground beef
1 large shallot, minced (about 1/4 cup)
2 very large garlic cloves, minced
3 Tbl tomato paste
1 cup Merlot
Kosher Salt
Fresh Basil
Shredded cheddar or grated Romano cheese (Optional)
- Cut zucchini in half lenghtwise, then cut into strips about 1/2 inch
wide. Dice into approximately 1/2 inch cubes.
- Brown ground beef with about 1/3 tsp salt over medium high heat in skillet
- Add shallot and garlic and add another 1/3 tsp salt
- Add tomato paste and work thoroughly into beef
- Reduce heat and add Merlot and zucchini
- Cover and simmer until Zucchini is just tender
- Turn off heat and add basil
Serve with cheese if desired.
