Quick Zucchini Skillet

Use ground beef, ground turkey, ground lamb or ground chicken.

What you need

  1. One 2 inch diameter freshly picked zucchini (about 3 cups cubed)
  2. 1 lb. ground beef
  3. 1 large shallot, minced (about 1/4 cup)
  4. 2 very large garlic cloves, minced
  5. 3 Tbl tomato paste
  6. 1 cup Merlot
  7. Kosher Salt
  8. Fresh Basil
  9. Shredded cheddar or grated Romano cheese (Optional)

How to make it

  1. Cut zucchini in half lenghtwise, then cut into strips about 1/2 inch wide. Dice into approximately 1/2 inch cubes.
  2. Brown ground beef with about 1/3 tsp salt over medium high heat in skillet
  3. Add shallot and garlic and add another 1/3 tsp salt
  4. Add tomato paste and work thoroughly into beef
  5. Reduce heat and add Merlot and zucchini
  6. Cover and simmer until Zucchini is just tender
  7. Turn off heat and add basil

Serve with cheese, or just as is.
