Almond Cinnamon Coffee Cake

This is super awesome coffee cake with no flour or sugar. It is sweetened with agave syrup and leavened with eggs and baking soda.
What you need
- 1/2 cup plain greek yogurt
- 3 Tablespoons agave syrup
- 2 large eggs
- 1/4 tsp kosher salt
- 1/2 tsp baking soda
- 1 tsp ground cinnamon
- 2 1/2 cups blanched almond flour or regular almond meal
- 3 Tablespoons melted butter
- 2 Tablespoons agave syrup
- 3 tsp ground cinnamon
How to make it
- Preheat oven to 325º
- Cut a piece of parchment to line the base of a 9 inch pie pan
- Butter the pan base and sides, place parchment over base and butter parchment
- Combine the last three ingredients for cinnamon syrup and set aside
- Combine the first three ingredients (yogurt, 3T agave, eggs)
- Add salt, soda, cinnamon and almond meal to the yogurt mixture, making sure to press out any lumps of almond flour/meal
- Remove 1/3 of the batter and spoon the remaining 2/3 batter into the pie pan, spreading into an even layer
- Drop 3/4 of the cinnamon syrup in spoonfuls over the top of the batter
- Drop spoonfuls of the remaining 1/3 almond batter over the surface
- Smooth top of batter gently (some spots will blend with syrup, which is fine)
- Slightly heat remaining 1/4 syrup and drizzle over the top
- Bake for 45 minutes turning halfway through baking - Top should be nicely browned and cake set - toothpick will come out with no crumbs
- Let cool in pan 45 minutes then cut into squares or wedges
