Iced Anise Cookies
What you need
- 1 cup butter, softened
- 3/4 cup sugar
- 1 Tbl anise seeds - lightly crushed or ground
- 1 Tbl zest from Organic orange
- 3 cups flour
- 3 tsp baking powder
- 1/4 tsp salt
- 2-3 eggs, as needed (it's possibly only one would be required based on consistency)
- 1 cup powdered sugar
- pinch of ground anise
- 1 tsp - 1 tbl orange zest
- Orange juice
How to make it
- Cream butter and sugar
- Add anise and orange zest. Combine well
- Add flour, baking powder and salt, mixing very well. The mixture should be very crumbly like biscuit dough.
- Make a well in the center of bowl and add an egg. Mix to incorporate.
- Make another well and add a second egg. Mix to incorporate until dough forms a ball. Add remaining egg if needed.
- Knead gently until smooth.
- Let dough rest a few minutes, then roll pieces into 1 inch balls.
- Bake at 350 for 15 minutes. Remove from pans and cool completely.
- Combine powdered sugar, anise and orange zest
- Add orange juice to make a glaze
- Place cooled cookies on a rack over a baking sheet
- Pour glaze by spoonfuls over cookies, making sure to coat all sides.
