Apple Chutney

If you ever eat indian food, you've probably had some sort of chutney. It's a wonderful fruit based condiment that tastes delicious with meats, curries and on bread. It is also a nice way to use home grown fruit.

What you need

  1. Approximately 4 medium granny smith apples
  2. 1 large onion, chopped
  3. 1 garlic clove, minced
  4. 1 tsp - 1 Tbl ginger
  5. salt (not more than 1/2 tsp)
  6. 1/2 - 2 tsp mustard seeds
  7. 1/2 hot red jalapeno or 1/2 tsp hot red peper flakes
  8. 1/2 cup apple cider vinegar
  9. 1/2 cup + 2Tbl sugar
  10. 1 tsp ground cinnamon
  11. 1 1/2 tsp ground allspice
  12. 1/2 cup or more dried cranberries and tart cherries combined
  13. 1 Tbl canola or olive oil

How to make it

  1. In a small saucepan, combine sugar and vinegar and heat stirring until sugar is completely dissolved
  2. Place mustard seeds in the bottom of a medium skillet or sauce pan over medium high heat
  3. When seeds start to pop, add oil
  4. Sauté onion and apple with a little salt until softened - do not brown!
  5. Add garlic and cook briefly
  6. Add vinegar/sugar mixture and remaining ingredients
  7. Bring to low boil, reduce heat to medium
  8. Continue to cook uncovered, liquid should remain at a low boil, reducing the head as needed to avoid scorching
  9. Cook until all liquid has evaporated (perhaps about 40 minutes to 1 hour)
  10. Allow to cool and serve at room temperature of chilled with meats or bread
