Apple Radicchio Salad

What you need

  1. 1 or 2 red radicchio, depending on size
  2. 2 red or golden delicious apples (a combination is pretty)
  3. 4 slices bacon, fat rendered (fried crisp)
  4. 1/4 cup apple cider vinegar
  5. 1 tbl dijon mustard
  6. 1 small garlic clove, mashed
  7. 1/2 cup olive oil
  8. 1/2 teaspoon kosher salt
  9. Black pepper to taste
  10. Chopped toasted pecans (optional)

How to make it

  1. In a bowl, whisk together vinegar, mustard, salt and garlic
  2. While whisking, add olive oil in a thin stream until emulsified
  3. Cut radicchio into quarters, remove core and slice across to derive shreds
  4. Chop bacon coarsely and reserve for top
  5. Wash apples and wipe dry
  6. Cut into quarters, remove cores and stems, but do not peel
  7. Slice into thin strips and place into dressing to prevent oxidization
  8. Holding back the apples, pour a little of the dressing onto the radicchio and toss well
  9. Place dressed radicchio onto individual salad plates or onto a serving platter
  10. Artfully place apple slices over the radicchio, draining off excess dressing
  11. Sprinkle top with chopped bacon and pecans
  12. Lightly grind black pepper over all
