Arabian Nights Delight (Milk Pudding)
Another experiment based on this recipe for perfect panna cotta with less gelatin for a more custard-like texture and exotic flavors of the middle east.
What you need
- 1 1/2 cups whole milk (you could use half & half or cream)
- 1/8 tsp ground cardamom
- 1/8 tsp vanilla powder
- 3/4 oz agave syrup
- 1 Tablespoon rosewater
- 2 Tablespoons cold water
- 1 1/4 - 1 1/2 tsp gelatin powder
How to make it
- Mix rose water with water and sprinkle gelatin over - let stand while the milk heats
- Heat milk with cardamom, vanilla and agave in a heavy saucepan over medium heat - this takes only minutes
- When steam appears and tiny bubbles just begin to form around edge, remove pan from heat
- Spoon in gelatin mixture and stir until gelatin is completely dissolved
- Ladle into custard cups (2 or 4 depending on how many you will serve)
- Cover with plastic and let stand a few minutes then chill for several hours before serving
I find these keep covered in the refrigerator for 3-4 days
