Artichoke & Tuna Salad

A simple take-off on artichoke spread. It can be served on bread or fresh greens dressed with lemon and olive oil.

What you need

  1. 2 x 6 oz. cans of Tuna in water
  2. 1 14-15 oz. can artichoke hearts
  3. 2 tablespoons (or to taste) good quality mayonnaise
  4. 1/4 cup grated parmesan cheese
  5. 2 tsp fresh thyme leaves, lightly chopped (optional)
  6. Lemon juice (optional)
  7. freshly ground black pepper

How to make it

  1. Drain tuna
  2. If artichoke hearts are whole, quarter them
  3. Combine tuna, artichoke hearts, mayonnaise, parmesan, black pepper and thyme
  4. Add lemon juice if desired to adjust consistency
  5. Mix well and chill slightly
