Artichoke & Tuna Salad
A simple take-off on artichoke spread. It can be served on bread or fresh
greens dressed with lemon and olive oil.
What you need
- 2 x 6 oz. cans of Tuna in water
- 1 14-15 oz. can artichoke hearts
- 2 tablespoons (or to taste) good quality mayonnaise
- 1/4 cup grated parmesan cheese
- 2 tsp fresh thyme leaves, lightly chopped (optional)
- Lemon juice (optional)
- freshly ground black pepper
How to make it
- Drain tuna
- If artichoke hearts are whole, quarter them
- Combine tuna, artichoke hearts, mayonnaise, parmesan,
black pepper and thyme
- Add lemon juice if desired to adjust consistency
- Mix well and chill slightly
