Easy Baked Apples
This is a pretty simple dish and if you don't go overboard with
the sweetener, reasonable for a dessert or breakfast food. I
recommend Earth Balance Soy Margarine cubes to make this recipe
especially easy.
What you need
- Approximately 3 medium granny smith apples
- 3 tbl agave syrup or brown sugar
- 2/3 cup chopped dried apricots or sultanas or raisins
- 1/2 cup chopped unsalted nuts
- 3/4 tsp ground cinnamon
- 2 Tbl soy margarine or butter cut into 6 equal pieces
- 1 1/2 cups water or apple juice
How to make it
- Preheat oven to 375º
- In a small bowl combine sweetener and cinnamon
- Cut apples in half (don't peel) and using a melon baller, remove the core
- With a paring knife, notch out the stem and blossom ends, but retain
the bowl shape in the center of the apple
- Place apples into a shallow baking dish
- Distribute the dried fruit and nuts in the cavities of the apple halves
- Place 2 tsp cinnamon mixture on each apple over the fruit and nuts
- Top each center with one teaspoon of margarine/butter
- Pour water or apple juice around apples
- Bake until apples are soft and sugar has spread over the top and
melted fully (approx. 30-50 minutes)
