Balsamic Vinaigrette

What you need

  1. Extra Virgin Olive Oil
  2. Balsamic Vinegar
  3. Garlic, crushed
  4. Dijon mustard
  5. Freshly ground black pepper
  6. Salt

How to make it

  1. In a jar with a tight fitting lid, pour the desired amount of olive oil
  2. Add vinegar to the desired proportion
  3. Add garlic, mustard, salt and pepper
  4. Close jar tightly and shake until combined
  5. Dress the salad just before serving

No proportions are given because you will modify it to suit your own taste. If you're not sure how to begin start with 1 cup oil, 1/4 - 1/3 cup vinegar, 1 large tsp Dijon mustard, 1 small clove garlic, salt and pepper. Excellent for flavorful greens or bean salad. Balsamic vinegar has a heavy and slightly sweet flavor. This recipe is only Balsamic Vinaigrette if you use Balsamic vinegar. Don't bother to substitute.
