Balsamic Vinaigrette

Extra Virgin Olive Oil
Balsamic Vinegar
Garlic, crushed
Dijon mustard
Freshly ground black pepper
Salt
  • In a jar with a tight fitting lid, pour the desired amount of olive oil
  • Add vinegar to the desired proportion
  • Add garlic, mustard, salt and pepper
  • Close jar tightly and shake until combined
  • Dress the salad just before serving

    No proportions are given because you will modify it to suit your own taste. If you're not sure how to begin start with 1 cup oil, 1/4 - 1/3 cup vinegar, 1 large tsp Dijon mustard, 1 small clove garlic, salt and pepper. Excellent for flavorful greens or bean salad. Balsamic vinegar has a heavy and slightly sweet flavor. This recipe is only Balsamic Vinaigrette if you use Balsamic vinegar. Don't bother to substitute.
