Banana Breakfast Bars
These are super moist and not overly sweet. Rely on very ripe fruit, since the sweetness comes from there.
What you need
- 1 2/3 cups old fashioned rolled oats
- 1/3 cup ground flax
- 1 very ripe bartlett pear, peeled, cored and mashed (or substitute unsweetened applesauce)
- 2 large ripe bananas, peeled and mashed
- 1/2 cup unsweetened, shredded coconut
- 1/2 cup dried apricots, chopped
- 1/4 cup raw almonds, chopped
- pinch kosher or sea salt
- 1 tsp olive oil or sunflower seed oil
How to make it
- Preheat oven to 350º
- Mix all ingredients except oil in a bowl - blend thoroughly pressing with a spatula
- Pour and spread 1 tsp oil over the bottom and sides of a baking dish; 9x9 or 7x11 or equivalent
- Press mixture into the base of the baking dish in a very even layer and smoothing top and sides
- Bake for 30-35 minutes until lightly browned around the edges
- Let cool completely in the pan, then cut into squares
A great breakfast or mid-afternoon snack
