Banana Breakfast Bars

These are super moist and not overly sweet. Rely on very ripe fruit, since the sweetness comes from there.

What you need

  1. 1 2/3 cups old fashioned rolled oats
  2. 1/3 cup ground flax
  3. 1 very ripe bartlett pear, peeled, cored and mashed (or substitute unsweetened applesauce)
  4. 2 large ripe bananas, peeled and mashed
  5. 1/2 cup unsweetened, shredded coconut
  6. 1/2 cup dried apricots, chopped
  7. 1/4 cup raw almonds, chopped
  8. pinch kosher or sea salt
  9. 1 tsp olive oil or sunflower seed oil

How to make it

  1. Preheat oven to 350º
  2. Mix all ingredients except oil in a bowl - blend thoroughly pressing with a spatula
  3. Pour and spread 1 tsp oil over the bottom and sides of a baking dish; 9x9 or 7x11 or equivalent
  4. Press mixture into the base of the baking dish in a very even layer and smoothing top and sides
  5. Bake for 30-35 minutes until lightly browned around the edges
  6. Let cool completely in the pan, then cut into squares

A great breakfast or mid-afternoon snack
