Banana Ice Cream

The alcohol in this recipe assists the frozen product from becoming super hard, making it easier to scoop. You can leave it out.

What you need

  1. 3 ripe bananas
  2. 2 cups half & half
  3. 3/4~ ounce agave syrup (taste the mixture as this amount depends on the sweetness of the bananas)
  4. pinch of salt
  5. 1/2 vanilla bean, split and seeds scraped
  6. (Optional) - 1/2 ounce brandy or vodka

How to make it

  1. In a heavy bottom saucepan, heat half & half cream with vanilla bean/seeds and salt over medium low heat until small bubbles appear around the edge and it's hot, but not boiling - stir occasionally
  2. The mixture can be allowed to steep for up to 30 minutes
  3. Remove saucepan from heat
  4. Mash the bananas well and stir into the cream mixture
  5. Stir in the brandy if you're using it
  6. Cool to room temperature
  7. Pour mixture into an ice cream freezer and follow makers instructions
  8. Pour into a container and freeze for 4 hours before serving
