Smoke Cooked Flank Steak

This serves two people.

What you need

  1. 1 1/4 - 1 1/2 lb beef flank steak
  2. 1/2 cup olive oil
  3. 1/4 cup soy sauce
  4. 1/4 cup red wine vinegar
  5. 1/4 cup brown sugar
  6. 1/4 cup fresh minced ginger
  7. 1/4 cup fresh minced garlic
  8. Oak wood chunks or twigs for smoking

How to make it

  1. I like this with oak, but any fruitwood would be fine to use. Soak the wood for an hour before using
  2. The night before cooking, place flank steak into a ziplock bag and add all the marinade ingredients.
  3. Press out all the air and seal the bag tightly
  4. Massage the marinade all over the meat and refrigerate
  5. In the morning, massage the marinade into the meat again and refrigerate until about 1 hour before cooking
  6. Prepare the coals and bring the smoker to between 200 and 230 degrees
  7. Remove the flank steak but reserve the marinade
  8. Set the steak on a rack in a disposable baking dish
  9. Add a small amount of water to the pan
  10. Place soaked oak onto the coals and place the baking dish on the grill rack over the coals
  11. Cook for about 1 1/2 - 2 hours
  12. When the steak is nearly cooked, place reserved marinade into a small saucepan and bring to a boil
  13. Reduce heat slightly and cook until the marinade is slightly reduced
  14. Remove the steak from the grill and let stand about 5 minutes. Carve very thinly against the grain and serve with the sauce
