Smoke Cooked Flank Steak
This serves two people.
What you need
- 1 1/4 - 1 1/2 lb beef flank steak
- 1/2 cup olive oil
- 1/4 cup soy sauce
- 1/4 cup red wine vinegar
- 1/4 cup brown sugar
- 1/4 cup fresh minced ginger
- 1/4 cup fresh minced garlic
- Oak wood chunks or twigs for smoking
How to make it
- I like this with oak, but any fruitwood would be fine to use. Soak the wood for an hour before using
- The night before cooking, place flank steak into a ziplock bag and add all the marinade ingredients.
- Press out all the air and seal the bag tightly
- Massage the marinade all over the meat and refrigerate
- In the morning, massage the marinade into the meat again and refrigerate until about 1 hour before cooking
- Prepare the coals and bring the smoker to between 200 and 230 degrees
- Remove the flank steak but reserve the marinade
- Set the steak on a rack in a disposable baking dish
- Add a small amount of water to the pan
- Place soaked oak onto the coals and place the baking dish on the grill rack over the coals
- Cook for about 1 1/2 - 2 hours
- When the steak is nearly cooked, place reserved marinade into a small saucepan and bring to a boil
- Reduce heat slightly and cook until the marinade is slightly reduced
- Remove the steak from the grill and let stand about 5 minutes. Carve very thinly against the grain and serve with the sauce
