BBQ Sauce (from scratch)

When you have extra summer tomatoes.

What you need

  1. Fresh plum tomatoes (about 1 - 1 1/2 lbs)
  2. Water to cover
  3. 1/2 tsp salt
  4. Ground black pepper
  5. 1 tbl oil
  6. 1 onion
  7. 1 jalapeno (or more)
  8. 2 garlic cloves
  9. 2 Tbl molasses or equivalent other sweetener
  10. 1/4 - 1/3 cup brown sugar
  11. 2-3 tbl worcestershire
  12. 1/2 tsp allspice
  13. Pinch cinnamon
  14. 2 tbl balsamic vinegar
  15. 1 bottle ale
  16. 2-3 tbl chili powder
  17. salt and pepper to taste

How to make it

  1. Peel tomatoes and place in pot with water to cover (about 1 cup water) with salt and pepper
  2. Cook until thickened (about 30 minutes)
  3. Sauté onion in oil until it begins to brown, add jalapeno and garlic and continue sautéing until jalapeno is slightly softened (about 2 minutes)
  4. To tomato sauce, add molasses, brown sugar, allspice, cinnamon and worcestershire add onion mixture to tomato mixture and combine well bring to a low boil and reduce heat to med-low to low so it simmers gently
  5. add beer, chili powder, salt and pepper and simmer and reduce until desired consistency (approx 1 - 2 hours)
