Bechamel Sauce

What you need

  1. 1/2 cup unsalted butter
  2. 3-4 tbl flour
  3. 8 cups milk, hot
  4. Freshly grated nutmeg
  5. Salt & Pepper

How to make it

  1. Prepare the Bechamel sauce by heating the milk in a saucepan.
  2. Melt butter in a pot large enough to hold the milk.
  3. Add flour and mix until no lumps remain. Cook briefly, but don't brown.
  4. Stir in about 1/2 cup of the milk and mix until smooth.
  5. Gradually incorporate the remaining milk stirring after each addition until smooth.
  6. Season with nutmeg, salt & pepper (Note: nutmeg can be strong, so use caution) Continue cooking until thickened.
