Beef Kabobs

On summer days when I want to spend time in the garden or have to work all day, I take out a package of beef chuck and pop it frozen into a zip lock bag, pour in the marinade ingredients and let it work all day long.

What you need

  1. 1 lb. beef chuck meat, cut into fairly equal sized chunks
  2. 1/4 cup soy sauce
  3. 1/4 cup white or red wine
  4. 2 garlic cloves, squashed and peeled
  5. Bamboo skewers

How to make it

  1. Place beef into a ziplock bag
  2. Add Soy, Wine and Garlic
  3. Press out the air and seal the bag tightly
  4. Press the marinade all over the meat, breaking pieces apart if frozen
  5. Leave at room temperature for an hour, then refrigerate, or refrigerate immediately
  6. Marinate 8-10 hours if possible
  7. Prepare grill to medium hot and remove meat from refrigerator
  8. Soak skewers in water for about 30 minutes
  9. When coals are ready, make about 3-5 skewers of the beef cubes - don't pack too tightly
  10. Place skewers on a rack in a baking dish to allow excess marinade to drip off
  11. Place skewers directly over coals and cook turning with tongs every 2-3 minutes to char all sides
  12. You can test for doneness by pressing one of the larger cubes with your tongs
  13. If they need additional cooking time (not often) move off the coals to the side of the grill and cover for a couple of minutes until done to you liking

When I make this I usually also toss quartered onions and red bell peppers on the grill next to the meat skewers.
