Beet Salad

What you need

  1. Medium beets, unpeeled
  2. Raspberry vinegar
  3. Olive Oil
  4. Salt and pepper to taste
  5. Fresh mint for garnish

How to make it

  1. Preheat oven to 350º
  2. Wash beets. Cut off all tops.
  3. Wrap in aluminum foil and bake for one hour or until tender.
  4. Cool and slip skins off.
  5. Slice in thin rounds. Add vinaigrette.
  6. Let marinate for 1 hour. Top with mint. Serve at room temperature.
