Roasted Beets, Potatoes and Butternut Squash with Rosemary and Garlic

This is one of those comforting main dishes for winter months with the piney rosemary and earthy beets. It's also a nice vegetarian/vegan meal at any time of year. It can be changed up with different herbs and adding celery for a lighter component is delicious too.

What you need

  1. 3 or 4 medium sized beets (if they come with the greens, sauté them up as a side dish - delicious!), peeled and quartered
  2. A dozen or so red fingerling or tiny potatoes, skin on, well washed and dried
  3. 1 medium butternut squash, peeled and cut into pieces about the size of the beets/potatoes
  4. 1 to 2 yellow onions, peeled and sliced
  5. several sprigs fresh rosemary leaves, minced
  6. 2 large garlic cloves, peeled and smashed
  7. Olive oil - about 2-4 Tablespoons
  8. Salt and Black pepper

How to make it

  1. Preheat oven to 400º
  2. Place smashed garlic cloves into a small saucepan with the olive oil
  3. Over low heat, heat the oil until the garlic just begins to sizzle. Remove from heat and let steep while preparing veg or for about 10 minutes (or longer)
  4. Drizzle vegetables with garlic oil and mix well with your hands until very well coated
  5. Place vegetables in a single layer on baking sheets or in individual oven proof skillets/baking dishes
  6. Sprinkle minced rosemary leaves, salt and pepper
  7. Roast until onions are crispy and vegetables are tender, stirring once or twice - about an hour or so, depending on freshness of the veg

The onions get browned faster than the other vegetables, so if you don't like charred onions as we do, you should keep them in a separate dish while roasting. You can remove them earlier if you prefer. Sautéed beet greens are a treat. Cook them like you would chard and add a little minced garlic. This is vegan if you use olive oil or vegan margarine/spread for the fat.

If you use a delicate herb such as parsley, basil or cilantro, don't add it until you serve. They don't retain their flavor during roasting.
