Breakfast Frittata

What you need

  1. 4-6 large eggs
  2. 1/2 cup onion, chopped
  3. 1/4 cup ham, chopped
  4. 1/4 cup red bell pepper, chopped
  5. 1/4-1/2 cup shredded cheddar cheese (or any cheese)
  6. 1 tbl fresh thyme leaves (or substitute any herb such as mint, basil, oregano, etc.)
  7. 1/4 tsp crushed red pepper flakes (optional)
  8. 1/2 tsp salt
  9. Black Pepper to taste
  10. Parmesan cheese (optional)

How to make it

  1. Preheat oven to 375º
  2. In a mixing bowl, lightly beat the eggs and add the remaining ingredients
  3. Pour into a greased 8 x 8 inch casserole and bake for about 35-45 minutes, until lightly browned on top and center jiggles slightly
