Breakfast Frittata
What you need
- 4-6 large eggs
- 1/2 cup onion, chopped
- 1/4 cup ham, chopped
- 1/4 cup red bell pepper, chopped
- 1/4-1/2 cup shredded cheddar cheese (or any cheese)
- 1 tbl fresh thyme leaves (or substitute any herb such as mint, basil, oregano, etc.)
- 1/4 tsp crushed red pepper flakes (optional)
- 1/2 tsp salt
- Black Pepper to taste
- Parmesan cheese (optional)
How to make it
- Preheat oven to 375º
- In a mixing bowl, lightly beat the eggs and add the remaining ingredients
- Pour into a greased 8 x 8 inch casserole and bake for about 35-45 minutes, until lightly browned on top and center jiggles slightly
