Quinoa with Broccoli
Quinoa comes in a variety of colors, but all are able to be prepared the same way. Quinoa is a seed and it has saponin on it's outer skin. You will enjoy the flavor of your dish more if you spend a minute or two rinsing it well. Toasting the seeds before adding liquid is also a flavor enhancer.
What you need
- 4 scallions, chopped
- 2-3 mushrooms, chopped
- 1/4 yellow onion, chopped
- 1/2 tsp kosher salt
- Fresh herbs such as oregano, sage, parsley
- 1 1/2 - 2 cups broccoli stems, chopped
- 1 cup quinoa, rinsed well
- 2 cups broth
- Duck fat or olive oil
- Cheddar cheese (optional)
How to make it
- Sauté onion, scallion and mushrooms with salt in fat until beginning to color
- Add quinoa and toast over low heat for 5-8 minutes
- Add broccoli, herbs and broth, bring to a boil
- Cover and cook about 10 minutes
- *To make an even more tasty dish: Pour quinoa into a a greased baking dish and cover with grated cheddar cheese
- Bake at 350º until cheese is melted and starting to brown
