Quinoa with Broccoli

Quinoa comes in a variety of colors, but all are able to be prepared the same way. Quinoa is a seed and it has saponin on it's outer skin. You will enjoy the flavor of your dish more if you spend a minute or two rinsing it well. Toasting the seeds before adding liquid is also a flavor enhancer.

What you need

  1. 4 scallions, chopped
  2. 2-3 mushrooms, chopped
  3. 1/4 yellow onion, chopped
  4. 1/2 tsp kosher salt
  5. Fresh herbs such as oregano, sage, parsley
  6. 1 1/2 - 2 cups broccoli stems, chopped
  7. 1 cup quinoa, rinsed well
  8. 2 cups broth
  9. Duck fat or olive oil
  10. Cheddar cheese (optional)

How to make it

  1. Sauté onion, scallion and mushrooms with salt in fat until beginning to color
  2. Add quinoa and toast over low heat for 5-8 minutes
  3. Add broccoli, herbs and broth, bring to a boil
  4. Cover and cook about 10 minutes
  5. *To make an even more tasty dish: Pour quinoa into a a greased baking dish and cover with grated cheddar cheese
  6. Bake at 350º until cheese is melted and starting to brown
