14 Carrat Cake

What you need

  1. »«Cake»«
  2. 2 cups sifted flour
  3. 2 tsp baking powder
  4. 1 1/2 tsp baking soda
  5. 1 1/2 tsp salt
  6. 2 tsp cinnamon
  7. 2 cups sugar
  8. 1 1/2 cups salad oil
  9. 4 eggs
  10. 2 cups finely grated carrots
  11. 1 8 1/2 oz. can crushed pineapple, drained
  12. 1/2 cup chopped nuts
  13. 1 3 1/2 oz. can flaked coconut (optional)
  14. »«Frosting»«
  15. 1/2 cup butter
  16. 1 8 oz. pkg cream cheese
  17. 1 tsp vanilla
  18. 1 lb. powdered sugar

How to make it

  1. preheat oven to 350º
  2. sift together first 4 ingredients
  3. add sugar, oil & eggs mix well
  4. add remaining ingredients and blend well
  5. pour into 3 greased and floured 9" round layer cake pans (hint: grease pans, line with lightly greased waxed paper)
  6. bake 35-40 minutes
  7. cool for a few minutes and turn out on racks
  8. mix frosting ingredients until smooth
  9. if mixture is too thick, add a little milk
  10. spread on cooled cake and assemble
