Chicken Casserole

What you need

  1. 6 boned chicken thighs
  2. 1 package of frozen Oriental mixed vegetables
  3. 1 pkg frozen peas with pearl onion
  4. 3 med potatoes
  5. 2 cans cream of chicken soup
  6. 1/2 - 1 can water

How to make it

  1. Cook chicken (don't overcook)
  2. Dice potatoes and precook until medium done
  3. In a casserole dish, combine chicken, potatoes, oriental vegetables and peas & onions (you can add half package of peas but include all onions)
  4. Heat 2 cans soup with 1/2 can water. Thin with an extra 1/2 can water if desired
  5. Pour over chicken mixture
  6. Bake at 375 for 1 1/2 hours, stirring half way through
