Chicken Piccata

What you need

  1. 4 Chicken cutlets
  2. 2 Tbl vegetable oil
  3. 1/4 cup dry white wine
  4. 1 tsp minced garlic
  5. 1/2 cup low-sodium broth
  6. 2 Tbl fresh lemon juice
  7. 1 Tbl capers, drained
  8. 2 Tbl unsalted butter
  9. Fresh lemon slices
  10. Fresh chopped parsley
  11. Salt & Pepper
  12. Flour

How to make it

  1. Season cutlets with salt & pepper, then dust with flour
  2. Spray a sauté pan with nonstick spray then add vegetable oil
  3. Sauté cutlets over medium-high for 2-3 minutes on one side
  4. Flip cutlets, cover pan and sauté other side 1-2 minutes
  5. Transfer cutlets to a warm plate
  6. Pour off fat from the pan
  7. Deglaze pan with wine and add minced garlic
  8. Cook until garlic is slightly brown and liquid is nearly gone - about 2 minutes
  9. Add broth, lemon juice and capers
  10. Return cutlets to pan and cook on each side 1 minute
  11. Transfer cutlets to a warm plate
  12. Finish sauce with butter and lemon slices - once butter melts, pour sauce over cutlets
  13. Garnish with chpped parsley
