Chickpea (Garbanzo) Pilaf

Although excellent as a side dish, we use this as a main dish for meatless meals. It also has ingredients that help counter depressions.

What you need

  1. 1 cup brown basmati rice
  2. 1 onion, finely chopped
  3. 1 large clove garlic, minced
  4. 1 tsp ground sweet paprika
  5. 2 - 4 Tablespoons whole sesame seeds
  6. 1/2 tsp kosher salt
  7. 1 1/2 cups cooked chickpeas
  8. 2 (or more) cups chopped fresh chard leaves
  9. 2 cups water
  10. 2 tbl chopped fresh parsley
  11. Fresh lemon juice
  12. Olive oil
  13. Optional: 1-2 Tbl Olive oil or butter (for Vegan use Olive oil) to finish

How to make it

  1. Heat olive oil in a saucepan over medium heat
  2. Add onion with salt and cook until translucent
  3. Add garlic, paprika and sesame seeds and toast until fragrant (2-3 minutes)
  4. Add rice and stir to coat with oil and seasonings
  5. Add water and bring to a boil
  6. Reduce heat, cover and cook for 10 minutes, then add chickpeas
  7. Continue cooking until rice is cooked (up to 30 minutes more)
  8. Stir in chard, cover again and let chard wilt for 5-10 minutes
  9. Turn off heat and stir in parsley and lemon juice
  10. Taste to see if it needs additional salt, then you can stir in butter, or skip the butter to keep it vegan
