Chickpea (Garbanzo) Pilaf
Although excellent as a side dish, we use this as a main dish for meatless meals. It also has ingredients that help counter depressions.
What you need
- 1 cup brown basmati rice
- 1 onion, finely chopped
- 1 large clove garlic, minced
- 1 tsp ground sweet paprika
- 2 - 4 Tablespoons whole sesame seeds
- 1/2 tsp kosher salt
- 1 1/2 cups cooked chickpeas
- 2 (or more) cups chopped fresh chard leaves
- 2 cups water
- 2 tbl chopped fresh parsley
- Fresh lemon juice
- Olive oil
- Optional: 1-2 Tbl Olive oil or butter (for Vegan use Olive oil) to finish
How to make it
- Heat olive oil in a saucepan over medium heat
- Add onion with salt and cook until translucent
- Add garlic, paprika and sesame seeds and toast until fragrant (2-3 minutes)
- Add rice and stir to coat with oil and seasonings
- Add water and bring to a boil
- Reduce heat, cover and cook for 10 minutes, then add chickpeas
- Continue cooking until rice is cooked (up to 30 minutes more)
- Stir in chard, cover again and let chard wilt for 5-10 minutes
- Turn off heat and stir in parsley and lemon juice
- Taste to see if it needs additional salt, then you can stir in butter, or skip the butter to keep it vegan
