Chili Beans
If you're not concerned about this being a vegetarian meal, you can add 1 lb of ground meat and sauté it with the onion and spices.
What you need
- 1 lb (2 cups dry) Aduki beans, soaked and cooked until semi-soft or as desired
- 1 28 oz. can crushed tomatoes
- 1 large onion, chopped
- 3 cloves garlic, chopped
- 2-3 T Grandma's Chili Powder or a mild chili powder
- 1 T whole cumin seed
- 1 T Worcestershire sauce
- 2 - 4 Jalapeno peppers, chopped
- Salt to taste
How to make it
- Sauté onion, garlic, chili powder and cumin seed.
- Add remaining ingredients and simmer for approximately 1 1/2 hours or until all is flavorful and the beans are very tender.
Serve with Tabasco Sauce (yes, even with jalapeno - the flavor is terrific)
You could substitute a green bell pepper if you don't want to use the Jalapeno's.
