Classic Chocolate Mousse

What you need

  1. 6 ounces chocolate, semisweet or bittersweet or a blend
  2. 3 eggs, separated
  3. 1 cup heavy cream
  4. 1 ounce Grand Marnier or other orange flavoring

How to make it

  1. Melt chocolate in a double boiler over gently simmering water stirring occasionally
  2. Meanwhile, beat egg whites to soft peaks
  3. Whip cream and chill while melting chocolate
  4. Beat egg yolks with Grand Marnier and a pinch of salt
  5. Remove melted chocolate and let rest 1 minute
  6. Add chocolate to egg yolk mixture, then fold in egg whites being very gentle
  7. Fold in whipped cream
  8. Spoon into small glasses or ramekins and chill well before serving

This is nice served with additional whipped cream and fresh berries.
