Cold Day Soup

This is a very quick little dish with outstanding flavor and only a few ingredients. Perfect for rainy or dreary weather.

What you need

  1. 1/2 head cauliflower
  2. 1/2 head broccoli, stems and florets
  3. 4 cups light chicken broth
  4. Grated nutmeg (about 15 grates on a grater or start with 1/4 tsp ground)
  5. Kosher salt & fresh black pepper
  6. 1/2 cup grated gruyere cheese

How to make it

  1. In a soup or stock pot, heat chicken broth to a low boil
  2. Chop or break cauliflower into 1 inch pieces
  3. Remove florets from broccoli and set aside
  4. Peel and chop broccoli stems into 1/2 inch pieces
  5. Add cauliflower and broccoli stem pieces to hot broth, cover and cook until tender - about 10 minutes
  6. Using a potato masher, mash some of the cauliflower and broccoli pieces
  7. Add florets and nutmeg and cook until florets are tender
  8. Remove from heat and taste to adjust salt, pepper and nutmeg
  9. Top with gruyere cheese and serve
