Creamy Italian Dressing

And not an ounce of cream!
1 large clove garlic, mashed
1/3 cup red wine vinegar
1 heaping spoon good quality dijon mustard
1 tablespoon ketchup (yeah, that's right)
1/4 tsp salt
Freshly ground black pepper
1/2-2/3 cup olive oil
1/4 cup chopped fresh basil
- In a small mixing bowl, place mashed garlic
- Add vinegar, mustard, ketchup, salt and pepper
- While whisking, drizzle in a very thin stream 1/2 cup of the olive
oil
- Taste and adjust seasoning - if desired add remaining olive oil
- Stir in the basil
