Creamy Italian Dressing
What you need
- 1 large clove garlic, mashed
- 1/3 cup red wine vinegar
- 1 heaping spoon good quality dijon mustard
- 1 tablespoon ketchup (yeah, that's right)
- 1/4 tsp salt
- Freshly ground black pepper
- 1/2-2/3 cup olive oil
- 1/4 cup chopped fresh basil
How to make it
- In a small mixing bowl, place mashed garlic
- Add vinegar, mustard, ketchup, salt and pepper
- While whisking, drizzle in a very thin stream 1/2 cup of the olive
oil
- Taste and adjust seasoning - if desired add remaining olive oil
- Stir in the basil
