Diabetic Gravy

This recipe is great for keeping to the lower GI foods.
2 tbl olive oil
2 tbl besan* (chick pea flour)
2 cups low fat broth, heated
- Melt margarine in olive oil in a saucepan over medium heat
- When melted, stir in Besan and mix well
- Allow to cook several minutes, until Besan has absorbed the fat
- Add about 1/3 cup of the heated vegetable broth and whisk until no lumps remain and liquid is absorbed
- Continue adding small amount of broth until half of it is added, whisking to incorporate and remove lumps
- Add remaining broth and whisk until blended
- Cook over medium heat until thickened
*Besan or Gram (not graham) flour can be purchased from indian
markets or online.
