Lower GI Gravy

What you need

  1. 2 tbl olive oil
  2. 2 tbl besan* (chick pea flour)
  3. 2 cups low fat broth, heated

How to make it

  1. Melt margarine in olive oil in a saucepan over medium heat
  2. When melted, stir in Besan and mix well
  3. Allow to cook several minutes, until Besan has absorbed the fat
  4. Add about 1/3 cup of the heated vegetable broth and whisk until no lumps remain and liquid is absorbed
  5. Continue adding small amount of broth until half of it is added, whisking to incorporate and remove lumps
  6. Add remaining broth and whisk until blended
  7. Cook over medium heat until thickened

*Besan or Gram (not Graham) flour can be purchased from indian / middle eastern markets or online.
