Duck & Chicken Salad

What you need

  1. 1 1/2 - 2 cups cooked duck breast, diced
  2. 1 cup cooked chicken breast, diced
  3. 1 stalk celery, diced
  4. 1 large green onion, minced or 1/4 cup minced red onion
  5. 1 Tbl mayonnaise (without sugar)
  6. 1 1/2 Tbl dijon mustard
  7. Ground black pepper
  8. 3 cups torn lettuce dressed with red wine vinegar, olive oil and a pinch of salt

How to make it

  1. In a small bowl combine mayo, mustard and ground black pepper to taste
  2. Add duck, chicken, onion and celery and combine well
  3. Refrigerate for 30 minutes up to several hours
  4. Divide dressed greens between two shallow bowls
  5. Top with half the duck salad
  6. Garnish with fresh herb if desired, such as parsley or tarragon
