Duck & Chicken Salad
What you need
- 1 1/2 - 2 cups cooked duck breast, diced
- 1 cup cooked chicken breast, diced
- 1 stalk celery, diced
- 1 large green onion, minced or 1/4 cup minced red onion
- 1 Tbl mayonnaise (without sugar)
- 1 1/2 Tbl dijon mustard
- Ground black pepper
- 3 cups torn lettuce dressed with red wine vinegar, olive oil and a pinch of salt
How to make it
- In a small bowl combine mayo, mustard and ground black pepper to taste
- Add duck, chicken, onion and celery and combine well
- Refrigerate for 30 minutes up to several hours
- Divide dressed greens between two shallow bowls
- Top with half the duck salad
- Garnish with fresh herb if desired, such as parsley or tarragon
