Fideos & Basmati Rice
This one always impresses the guests. Fideo is a type of pasta that is browned in oil, then cooked in broth and other seasonings. Often found in spanish and some middle eastern dishes.
What you need
- 1/4 cup Barilla Plus Thin Spaghetti broken into 1/2 - 1 inch pieces (the Fideos)
- 1 cup white basmati rice
- 1 shallot, finely minced
- 1/2 tsp kosher salt
- 1 3/4 cups low sodium chicken broth
- Olive oil
- 2 tablespoons unsalted butter
- Salt & Pepper to taste
- Fresh parsley leaves, minced
How to make it
- Heat olive oil in a saucepan over medium heat
- Add minced shallot and 1/2 tsp kosher salt and cook until translucent
- Add pasta and sauté until browned
- Add rice and stir to coat with oil (add more oil if needed)
- Cook until rice is opaque white
- Add broth, bring to a gentle boil, cover and reduce heat to low
- Simmer for 15-20 minutes until all broth is absorbed
- Poke several holes through the rice and add pieces of butter
- Re-cover and continue over very low heat until butter is absorbed
- Taste and add salt & pepper as needed
- Fluff and serve sprinkled with fresh minced parsley to accompany meat dishes
