Freezing Tomatoes
Too many tomatoes? I hate to throw them out so I always freeze a couple of bags of the heirlooms I grow.
What you need
- Freshly picked, ripe tomatoes
- Ziplock freezer bags
How to make it
- Pick tomatoes very ripe
- If you like, peel off skins - if very ripe, this can be done fresh from the garden - if not, pierce the skin in two to three spots and drop into boiling
water for about 2 minutes - remove to ice water and peel off skins
- Place about 1 - 2 lbs peeled tomatoes into labelled ziplock bag, press out excess air and seal well
- Place in freezer - can be kept about 6 months
