Freezing Tomatoes

Too many tomatoes? I hate to throw them out so I always freeze a couple of bags of the heirlooms I grow.

What you need

  1. Freshly picked, ripe tomatoes
  2. Ziplock freezer bags

How to make it

  1. Pick tomatoes very ripe
  2. If you like, peel off skins - if very ripe, this can be done fresh from the garden - if not, pierce the skin in two to three spots and drop into boiling water for about 2 minutes - remove to ice water and peel off skins
  3. Place about 1 - 2 lbs peeled tomatoes into labelled ziplock bag, press out excess air and seal well
  4. Place in freezer - can be kept about 6 months
