Fresh Apple Cake

Make the topping just after you put the cake into the oven!

What you need

  2. 4 cups chopped apples
  3. 1/2 - 1 cup sultanas or other dried fruit
  4. 1 cup chopped walnuts and pecans
  5. 1 cup vegetable oil
  6. 4 eggs
  7. 1 tsp vanilla
  8. 2 2/3 cup all-purpose flour
  9. 2 cups sugar
  10. 1 1/2 tsp baking soda
  11. 1 tsp kosher salt
  12. 2 tsp ground cinnamon
  13. 1/2 tsp ground nutmeg
  14. 1/2 tsp ground cloves

  16. 1 tbl sugar
  17. 1 tsp ground cinnamon

How to make it

»«For Cake»«

  1. preheat oven to 350º
  2. Combine flour, sugar, soda, salt, cinnamon, nutmeg and cloves
  3. Peel, core and chop apples fairly small (about 1/4 inch dice)
  4. Add apples to flour mixture
  5. In a 4 cup measure, add oil, eggs and vanilla
  6. Add oil mixture to apple mixture and stir to combine - this is very little batter to apples ratio so it takes care to be certain to get everything combined
  7. Pour batter into a greased and floured 13 x 9 inch glass baking dish
  8. Bake for about 20 minutes

  1. While cake is baking, combine sugar and cinnamon
  2. After cake has baked approximately 20 minutes or so, pull it out and sprinkle the sugar/cinnamon mixture all over top
  3. Replace cake in the oven and bake approximately 40-50 minutes longer, until a toothpick comes out moist but clean

This is a great for parties cut into 2 inch squares. Very moist and amazingly delicious!
