Ginger Tea

This is a recipe from an indian cookbook I have that saved my sanity one very cold year. Ginger is a very warming spice, and this tea really does warm you up nicely with a residual warmth as you are digesting it. Since this is such a simple recipe, I suggest finding a very high quality fresh ginger. I purchase mine at a local organic market and it comes from here in California. It's very fresh and makes a much better beverage than the fresh ginger from major super markets. Ginger tea is nicely spicy at the back of the throat. It can be drunk cold or hot.

What you need

  1. 2-4 inch piece of fresh ginger, peeled and sliced across
  2. 12 cups water
  3. 1/8 tsp pure Stevia powder or other sweetener to taste (optional)

How to make it

  1. Peel and slice ginger
  2. Place ginger and water into a saucepan, bring to a slow boil, reduce heat and simmer for 20-30 minutes. The finished tea will be a light amber color
  3. Turn off heat and add sweetener
