Goat Cheese & Fig Jam Toasts
Serve this unusual dish after dinner with a nice dessert wine or
sparkling wine. It also makes an elegant appetizer.
These can be something your guests put together and eat, or you can prepare a tray in advance, fully 'dressed'. I like to use
Cloverdale Wildflower honey or Orange Blossom honey.
What you need
- 8 oz. plain chevre
- 1 lb fresh ripe black mission figs
- 1 tsp fresh thyme leaves
- 2 tbl honey
- 1/4 cup water or 2 tbl water & 2 tbl fruity white wine
- pinch salt
- 1 sourdough baguette, sliced and toasted
- Additional thyme leaves, thyme blossoms, chopped chives, grated lemon rind for garnish
How to make it
- Bring goat cheese to room temperature (or warm slightly in the microwave)
- Remove stems from figs and cut into quarters and place into a small saucepan
- Add honey, thyme, water and wine if using
- Bring to a low boil, reduce heat and simmer until figs have broken down and the jam is thickened
- Allow to cool to room temperature
- To serve, spread some goat cheese on a toasted crostini, place a teasponful of jam on top, garnish
