Goat Cheese & Fig Jam Toasts

Serve this unusual dish after dinner with a nice dessert wine or sparkling wine. It also makes an elegant appetizer. These can be something your guests put together and eat, or you can prepare a tray in advance, fully 'dressed'. I like to use Cloverdale Wildflower honey or Orange Blossom honey.

What you need

  1. 8 oz. plain chevre
  2. 1 lb fresh ripe black mission figs
  3. 1 tsp fresh thyme leaves
  4. 2 tbl honey
  5. 1/4 cup water or 2 tbl water & 2 tbl fruity white wine
  6. pinch salt
  7. 1 sourdough baguette, sliced and toasted
  8. Additional thyme leaves, thyme blossoms, chopped chives, grated lemon rind for garnish

How to make it

  1. Bring goat cheese to room temperature (or warm slightly in the microwave)
  2. Remove stems from figs and cut into quarters and place into a small saucepan
  3. Add honey, thyme, water and wine if using
  4. Bring to a low boil, reduce heat and simmer until figs have broken down and the jam is thickened
  5. Allow to cool to room temperature
  6. To serve, spread some goat cheese on a toasted crostini, place a teasponful of jam on top, garnish
