Grapefruit & Avocado Salad
What you need
- Sections from 2 small to medium grapefruit
- 2 avocados, peeled, pitted and thinly sliced (sprinkle with lemon juice to
- prevent browning)
- Salad greens of choice
- 1/4 cup grapefruit juice
- 2 tbl white wine vinegar
- 1/2 cup olive oil
- 1/2 tsp kosher salt
How to make it
- In a bowl, whisk together grapefruit juice, vinegar and salt
- While whisking, add olive oil in a thin stream until emulsified
- Remove the pits from the olives and quarter them
- To arrange the salad, lay out the salad greens on a large
platter
- Top with grapefruit and avocado slices
- Drizzle with dressing
