Grilled Stuffed Figs

What you need

  1. 12 fresh black mission figs
  2. 4 oz. chevre (fresh goat cheese)
  3. 4 strips bacon, cut into 4 pieces
  4. Olive Oil
  5. Salt

How to make it

  1. Remove stems from figs, and make a slit about 3/4 of the way down toward the blossom end
  2. Squeeze figs from the base gently to open them
  3. Place about 1/2 - 1 tsp goat cheese inside each fig
  4. Wrap tightly with bacon and secure with a toothpick
  5. Place on a platter, drizzle lightly with olive oil and sprinkle with salt
  6. Place over hot coals and grill very quickly until bacon is crisped
  7. Remove to a platter and serve hot
