Grilled Vegetables

It always sounds wonderful and easy, but it sure presents logistical problems! I'm lucky to have both a smoker and kettle style grill, but it can still get complicated.

What you need

  1. 4 red bell peppers cut in half, stems, seeds and membrane removed
  2. 4 sweet onions, quartered
  3. 2 zucchini, cut in half crosswise, then lengthwise
  4. 1 bunch asparagus spears, tough ends removed
  5. 10-12 mushroom caps, stems removed
  6. Olive Oil
  7. Salt & Pepper

How to make it

  1. Prepare your grill to medium high heat
  2. Rub vegetables with olive oil and place on a baking sheet
  3. Sprinkle with salt and pepper
  4. Spread coals out in an even layer
  5. Lay vegetables onto grill directly over hot coals and cover grill
  6. Check in about 5 minutes to see how quickly they are cooking - you're looking for a slight charring/browning
  7. Turn when necessary and cook until done

Zucchini and asparagus can be precooked in a covered skillet with a small amount of water for about 3 minutes before placing on the grill.
