Ham & White Bean Soup

About the simplest, filling meal I have ever made. Perfect for cold, blustery weather.

What you need

  1. 1 lb. white beans, such as haricot or navy or lima
  2. 1 leftover hambone with meat
  3. 1 large onion, peeled and cut in half
  4. 1-2 fresh bay leaves, or 3-4 dried
  5. Water

How to make it

  1. Rinse beans and soak overnight in cold water to cover by 2 inches
  2. Drain and rinse beans and pick through for any foreign matter
  3. Place hambone, beans, onion and bay in a large soup pot
  4. Pour in water to cover ingredients (a small portion of the hambone might stick up)
  5. Turn on heat to medium and bring to a low boil, uncovered
  6. When it reaches the boil, cover and reduce heat to low
  7. Cook for 90 minutes to 2 hours, stirring and turning ham bone occasionally
  8. Taste beans for tenderness after 90 minutes - if cooked properly, turn off heat and add salt if needed (probably won't be needed) or continue cooking for another 30 minutes
  9. Adjust seasonings and allow to stand briefly before serving
