Ham Frittata

What you need

  1. 1 1/2 - 2 cups diced ham
  2. 1 small onion, diced
  3. 1/4 cup diced red bell pepper
  4. 2 cups chopped green cabbage
  5. 1 tsp dried parsley or 1 tbl fresh minced parsley
  6. 1/4 cup grated romano cheese
  7. Fresh ground black pepper
  8. 4 eggs
  9. 2-3 tbl cream or milk
  10. Duck fat or desired fat for sautéing and preparing the baking dish

How to make it

  1. Preheat oven to 375º
  2. Heat fat in a skillet
  3. Add ham and brown lightly on all sides
  4. Add onion, red pepper and cabbage and cook until lightly browned and softened and mixture is dry
  5. Remove from heat and allow to cool to room temperature
  6. Beat eggs with cream
  7. Add parsley, romano cheese and black pepper
  8. When ham mixture is no longer hot, add to eggs and blend well
  9. Pour into a greased pie pan and bake for 20-30 minutes until center jiggles just slightly
  10. Allow to stand a few minutes before serving
