Herbed Chicken Breasts

What you need

  1. 1 chicken breast per person, skinless and boneless
  2. 1 Tablespoon chimichurri sauce per chicken breast
  3. 1 - 2 tsp grated parmesan or romano cheese per chicken breast
  4. 1-2 tsp ground sweet spanish paprika total

How to make it

  1. Let chicken stand at room temperature for 15-30 minutes
  2. Heat oven to 350º
  3. If breasts are very large, you can cut them in half across
  4. Dry chicken with paper towels, then rub each breast with a tablespoon of the chimichurri sauce
  5. Place in a shallow baking dish in a single layer
  6. Spoon grated cheese over the top and sprinkle with paprika to taste
  7. Bake for about 30 minutes until the chicken is firm when pressed and registers 165º
